Abstract
A good hotel operational is based on good hotel management, so it minimize operational mistakes. A good hotel management supported by human resources, work environment, work spirit, and good work discipline as well. All these elements together will create a conducive working atmosphere in the management of a hotel. This research was conducted to find out the influence of work environment, work spirit, and work discipline to employees performance of Food and Beverage Production Department Alila Seminyak. This research used correlation regression analysis method. The samples of research were employees of Department of Food and Beverage Production Alila Seminyak amounted to 46 people, each given 4 types of questionnaires according to the variables. Further data was analyzed using partial T test to see the effect of each variable and F test to see the effect of all variables simultaneously. From result of research got influence variable of discipline by partially meaning to employee performance equal to 62,9% (p <0,05). While the variable of work spirit and work environment were partially not significant to employee performance (p> 0,05). Simultaneously work environment variable, work spirit, and work discipline had a significant effect on employee performance (p <0,05).
