Abstract

The kitchen laboratory is a place used by students for cooking practices. In the laboratory there are equipment such as work desks, stoves, shelves and sinks for washing equipment. All of the equipment in this kitchen is not much different from the quality used in five-star hotels and is generally an imported product whose size is not necessarily in accordance with the dimensions or size of the student's body. tools that do not fit the dimensions of the user's body plus the conditions of the room that are hot enough will run the risk of increasing workload, fatigue and complaints of skeletal muscles. Therefore this study was conducted to analyze the workload, fatigue and complaints of skeletal muscles which was done by measuring the microclimate of the room, anthropometry, work pulse, fatigue, and complaints of skeletal muscles. The measured microclimates are wet temperature, humidity, light intensity, and sound intensity. The results of the study showed that only the shelves were in line with student anthropometry. Workload, fatigue and complaints of skeletal muscles have increased significantly between before practice and after practice.
